Amaranth was a staple food in the typical Mesoamerican diet for thousands of years. In Mayan, Aztec, and Incan culture, amaranth had a special religious significance and was commonly used in the worship of their Gods.
Large statues made of amaranth and honey would be created (and later eaten) as part of certain ceremonies!
